Description: This is a classic Italian style air dried pork cheek, like face bacon you can eat raw. Dry cured then hung for at least 8 weeks.

This is amazing on a pizza, as part of a platter or wrapped round game or chicken. This has so much more flavour than pancetta and is the original ingredient in carbonara.
